Frito Salad

  • Small Fritos, (or the 'scoops' crushed up)

  • 1 bottle Catalina dressing-- the light kind works great

  • Green onion (as many as YOU like)

  • 2 cans kidney beans
The night before your party, or just the morning of: chop up the onion very thin and combine dressing, onion, and kidney beans. Cover and put in fridge. This flavors the dressing mixture. Right before serving, add Fritos. Try to make the right amount for the party, because this salad isn't good for leftovers. The Fritos get too soggy.

NOTE: sometimes I add chopped tomato and I've seen other people add different types of beans.To make for a small group (3-4): 1/2 bag (or less) of chips1/2 bottle of dressing ( or less) Green onions1 can kidney beansIf you 'marinate' the dressing mixture and find you didn't make enough of it, you can always just squeeze some extra Catalina in.
